Bacon and Spinach Quiche

For Shortcrust
6 oz. flour
4 oz. margarine
For Filling see below

12 ounces
streaky bacon
1 tablespoon
vegetable oil
eggs (beaten)
5 fluid ounces
carton natural yoghurt
8 ounces
chopped spinach (packet, thawed)
1⁄4 pint
salt and pepper


How to make and cook Bacon and Spinach Quiche?

1. Roll out pastry and use to line a 91/2" loose bottom flan ring. Bake blind until dry, but not brown (10 mins.).
2. Skin and slice onions and dice 4 oz. bacon. Lightly fry together. Mix eggs with yoghurt, milk and seasoning, stir in the pan ingredients.
3. Lastly mix in spinach, well drained. Pour all into flan case and bake at 375° for 30 minutes or until set. Form rest of bacon into little rolls, bake next to flan about 15 minutes, and use to garnish.

I sometimes sprinkle a little grated cheddar cheese in middle of flan if I'm serving it cold.
To freeze: Pack and freeze the baked ungamished flan. To use, thaw at room temperature for 6 hours. Refresh at 375° for 10-15 minutes. Then garnish.
