Banana Loaf

Three of the volunteers brought banana bread with them for sustenance. All were delicious! Here is Fatima's recipe.


250 grams
plain flour
2 teaspoons
baking powder
125 grams
unsalted butter
250 grams
caster sugar
mashed ripe bananas
lightly beaten eggs
1 teaspoon
vanilla extract
175 grams
chocolate chips


How to make Banana Loaf?

Preheat oven to 180°C.

Sift the flour and baking powder together in a large bowl. Beat all the rest of the ingredients together in a separate bowl and add it to the flour mix, being careful not to over mix.

Pour into a greased loaf tin and bake for 1 hour 15 minutes. Cool in tin for 5 minutes and then turn out onto a rack to cool.
