Curry

Ingredients

2 pounds
mutton/beef
3  
onions (medium)
1 bunch
chives
1 clove
garlic
1  
coconut (hard)
3 tablespoons
curry powder
1 teaspoon
sugar
2 tablespoons
tomato ketchup
1 tablespoon
ghee (animal fat)
1 bunch
bay leaf
6  
cardoman seeds
2 cups
water
1 teaspoon
fennel seeds
1 dash
angostura bitters

Instructions

How to make Curry?
1. Grate hard coconut, add water and allow to soak for at least 2 hours.
2. Cut the meat into small 1/2" squares and coat in curry powder. Heat ghee in frying pan and burn the finely chopped garlic clove. Add chopped seasonings, onions and meat and fry until meat is cooked through.
3. Squeeze grated coconut and throw away the solid part. Strain off the milky water which is left and add it to the cooked meat along with all of the other ingredients. Allow to simmer, stirring occasionally, for about 1/2 hour.
4. If the curry is too hot, add about 1 tablespoon of sugar. This has the effect of cutting the acidity and making the curry milder.
