Description
South Sea Island Pork Serve with rice. Serves 12.
Ingredients
3 pounds
pork 2 ounces
seasoned flour 2 ounces
lard 2 tablespoons
cooking oil 4
juice of oranges (or equivalent in juice form) 2
rind of oranges 1 pint
stock (1 1/2 pt. ) 12 ounces
petits pois 1⁄4 pint
cream (thick) 3 ounces
shredded almondsInstructions
How to make South Sea Island Pork?
1. Trim and prepare meat and cut into cubes. Roll in the flour and fry in the lard or oil.
2. Place in a casserole, add orange juice, grated rind and the stock.
3. Cover and cook for 1 1/2 hours. (This dish can be best frozen at this point).
4. Add peas and cook slowly for a further 1/2 hour or longer if frozen. Add cream, almonds and parsley.
Serve with rice.
Ideal for freezing or preparing the day before.
