Instructions

How to make Special Rice Salad?
1. Cook rice. Combine ingredients for dressing. Drain rice and pour dressing over hot rice in a bowl. Cover and let cool.
2. Fold in other ingredients except cucumber and chill. Add cucumber just before serving.
3. Peas or corn, meats and fish are optional, according to need or taste.

INGREDIENTS:

1 cup uncooked rice
1/2 cup chopped sweet pepper
1/4 cup chopped parsley
1/4 cup chopped onion
1/4 cup chopped eschalot
1 cup drained cooked peas or corn
1 seeded cucumber, diced
cooked chicken, ham or shrimp (optional)
For Dressing
6 tbsp. salad oil
3 tbsp. cider vinegar
1 tsp. salt/pepper to taste
1 tsp. dry tarragon
