How to make Scalloped Breadfruit?

1. Peel breadfruit but leave core. Wedge and boil in salted water until just cooked.
2. Pour off water and cover. Make thick cheese sauce with grated onion. Grease fireproof dish. Cut bacon into half inch sections. Cut out breadfruit core and slice breadfruit thinly.
3. Layer breadfruit, bacon and cheese sauce until all is used. Top with grated cheese and a few butter knobs.
4. Bake until browned at 350° for 30 minutes.
