Cook until just crisp the carrot strips and onion leaves. Drain.

To make Sauce: Mix the cornflour with the water. In a saucepan place the sugar and vinegar with the soya sauce and cook over medium heat until melted. At this stage the sauce looks terrible! Like gravy gone wrong, but you just have to keep stirring and stirring and in time it will thicken and clear. Then add the vegetables and pickle. If the sauce seems too thick, a little pickle juice may be added.

Batter for the pork cubes:

4 oz. plain flour
good pinch of salt
1 tbsp. oil
1/4 pint water
1 egg white

Sift the flour and salt into a bowl, make a well in the centre and spoon in the oil. Gradually add half the water and beat until smooth, then stir in the remainder of the water. Just before cooking whisk the egg white until stiff and fold into the batter. Dip the pork cubes into the batter and deep fry.

To serve place the pork on a warmed serving dish and pour sauce over.

I think the dish is better if the pork is battered and deep fried but I have on occasion served it without the batter and it is still very good.

2 lbs. cooked lean pork, cubed
2 tbsp. cornflour
1 large carrot cut into strips
3/4 cup of water
1 medium onion quartered and broken into leaves
1/3 cup of sugar
1/3 cup of vinegar
1/2 cup sweet cucumber pickles
1 tbsp. Soya sauce
