Potato Leaves Sauce (Jolabeiteh), with potato leaves, meat and ogeri

Ingredients

4 bunches
potato leaves
1⁄2 pound
meat (optional)

ogeri (balls - /maggi cubes)
3⁄4 pints
palm oil
   
dried fish (snapper/bonga/herrings)
4 ounces
beans

okras
   
salt and pepper (to taste)
3 tablespoons
groundnut paste

Instructions

How to make Potato Leaves Sauce (Jolabeiteh)?
1. Wash and cut up potato leaves finely.
2. Put water, salt, ogeri, meat in pot to boil for half an hour.
3. Add some of the flaked fish, okra and palm oil.
4. Continue boiling till liquid is 3/4 dry, add the potato leaves and the remaining fish, groundnut paste and beans. Cook gently for one hour till well blended.
5. Serve with boiled rice.
