Easy Gazpacho Soup



Blend all ingredients except pepper (green) in a blender.
Combine and mix thoroughly in a jug or glass jar and chill for several hours. Add finely chopped green pepper just before serving. Garnish with chopped parsley or fried croutons.
N.B. Leave out olive oil and can be used as a side dish.


1 clove garlic
1 medium onion;
1 carrot
2 medium cucumbers, peeled
1 large tin tomatoes or equivalent fresh 16 ozs. tomato sauce
1 can consomme soup
1/4 cup wine or cider vinegar
1/3 cup olive or salad oil
salt and pepper to taste
chopped green pepper
