Fried Potato Leaves

Ingredients

5 bunches
potato (leaves)
3⁄8 pints
groundnut oil (/palm oil)
1 pound
cooked meat
2  
bonga (deboned)
1  
pig's trotter (cooked)
2  
onions
4  
pepper (to taste)
1 teaspoon
bicarbonate of soda

Instructions

How to make Fried Potato Leaves?
1. Wash and shred potato leaves very fine.
2. Heat the oil and fry the leaves adding bicarbonate of soda to preserve the colour.
3. When brown, add cooked meat and seasons and dried fish. Add 1/2 pint water, simmer till well blended.
4. Serve hot with boiled rice, boiled mashed potatoes or cassava.
