Ingredients

2 tablespoons
oil (preferably palm oil)
1 kilogram
fish (filleted smoked or salted)
2  
onions (large, finely chopped)
200 grams
ground nuts (crushed, or peanut butter)
400 grams
tomatoes (tinned or 4 large ripe tomatoes, skinned and chopped)
2 tablespoons
tomato puree
1  
red chillis (1 - 2 to taste)
2 cloves
garlic
   
salt and pepper
1  
chicken stock cube (Maggi cube)

Instructions

How to make Groundnut Soup?

In a large saucepan, heat the oil and fry the onions and fish. Add the garlic and salt and sweat the mixture for 5 minutes. Remove the fish to a plate. Add the tomatoes and the tomato puree and bring to the boil. Put the ground nuts or peanut butter into a big bowl with 500 ml boiling water, blend to a paste and add to the fish mixture with the chillis. Simmer slowly until oil appears on the surface of the soup. Add the cooked fish and serve with rice balls or fu fu.
