A sweet and spicy fish dish served with a refreshing, fruity salsa

Ingredients

2 tablespoons
Grace Jamaican Jerk Seasoning (heaped)
2 tablespoons
clear honey
4  
salmon fillets
1  
ripe mango (firm skin removed, thinly sliced )
1⁄2  
pineapple (cored: and diced)
200 grams
black beans (rinsed and drained canned )
1  
red onion (chopped)
50 grams
coriander (fresh chopped )
1⁄4 tablespoon
salt

Instructions

How to make Honey Jerk Salmon With Mango Pineapple Salsa?

Salmon:
1. Heat the grill to medium-high. Mix the jerk seasoning and honey together in a bowl.
2. Place the salmon fillets on a foil:lined baking tray and brush all over the sauce.
3. Cook on the top shelf for 8;10 mins or until just cooked through (move the tray down a shelf if the salmon starts getting too carametised).

Salsa:
1. Combine mangoes, pineapple, black beans, Onion, coriander and salt in a bowl and mix well.
Serve and enjoy!

Notes

To make Salsa:
1 firm, ripe mango, skin removed, thinly sliced
1/2 pineapple, cored: and diced
