NB Congo peas or brown peas are excellent for this recipe.
How to make Rice and Peas?
1. Grate coconuts and using 4 cups of hot water express the milk by adding two cups of water at a time and squeezing the milk through a sieve after each addition until water is finished.
2. Put peas in a saucepan with coconut milk and add clove of garlic slightly bruised, cook till peas are tender but not overcooked.
3. Add spring onions, thyme, black pepper, salt meat/salt bacon, soya sauce.
4. Add rice well washed and drained: if liquid is not enough, add more liquid and cook rice till soft and liquid is absorbed.
