1⁄2 poundboiled yam
1hot milk (gill)
1⁄4 poundgrated cheese
How to make Yam Soufflé?
1. Crush boiled yam with hot milk, butter, egg yolks and grated cheese.
2. Whip the 2 egg whites stiffly and fold into yam mixture.
3. Put into greased pie dish, top with grated cheese and bake in a hot oven.
4. Eat when hot. Onion can also be added.
